Fresh fish from the Genkai Sea and Bungo Channel, prized ingredients from across Kyushu, and Hakata's own home-style cooking — all finished over binchotan charcoal or in a traditional hagama rice pot. From our signature charcoal-seared mackerel sushi to authentic Hakata motsunabe, this is Kyushu dining at its fullest.

A carefully chosen range of Japanese sake, shochu, and Kyushu wines lets you take your time over a meal and a drink. Opening September 18, 2026, at VIERRA Hakata Terrace, right by Hakata Station.

Kyushu's best, at the gateway to Hakata

A new charcoal grill and Kyushu-cuisine restaurant, Hakata Chatten, is opening at VIERRA Hakata Terrace, right by Hakata Station. Enjoy fresh fish from the Genkai Sea and Bungo Channel, and prized ingredients from across Kyushu, all finished over binchotan charcoal or in a traditional hagama rice pot.

What's in the name

"Chatten" is a Hakata-dialect word roughly meaning "went and did it." Eat well, drink well, lose yourself in the evening — that's the feeling we hope every guest leaves with.

Why mackerel and charcoal work so well together

Kyushu is famous for its mackerel. We slow-sear seasonal mackerel from Goto, Nagasaki, and the Bungo Channel over binchotan charcoal, pairing its toasty skin and rich flesh with greens in a single bite of sushi.

The extra care charcoal demands

Binchotan is harder to control than gas, but that's exactly what lets us draw out aroma while keeping the ingredient's own moisture and fat intact. We watch every piece closely and serve it at its very best that day.

What makes a hagama pot special

A hagama is a traditional rice pot — its thick iron body and wooden lid build up the pressure and convection needed to cook rice all at once. We use freshly milled Fukuoka-grown Hinohikari rice, so you get that aroma the moment the lid comes off, and a glossy, freshly steamed bowl.

Best alongside our charcoal grill

Beyond rice with homemade mentaiko, we offer seasonal variations like seared mackerel with spicy takana greens, or wagyu shigure-ni with charcoal-grilled shungiku. It takes 30–40 minutes to cook, but we promise it's worth the wait.
